Watermelon with Cucumber Summer Salad

Watermelon + cucumbers is one of the most refreshing combos of all time. Throw in some mint, red onion, and feta and toss it all with a very simple vinaigrette (just olive oil + red wine vinegar), and you’ve got yourself a mean summer salad. It’s the perfect summer side to go along grilled chicken, any cut of steak, or even a hamburger—beef, chicken, or veggie!

Tips from the test kitchen:

We love the saltiness and crumbliness of feta, but if you’re not a fan, fresh mozzarella balls or goat cheese would work, too. To take some of the bite out of red onions, soak the slices in water for about 15 minutes.
