Tuscan Bean Soup Mix

This soup mix is one of the Soup of Success mixes.  The organization, Soup of Success, empowers women to make positive changes in their lives through education and resources to build self esteem, develop independence, and improve quality of life.

 

Tuscan Bean Soup – can be vegan or non-vegan

1 bag tuscan bean soup mix”
1 seasoning packet (included in bag)
1 (14 oz) can diced tomatoes
1 (8 oz) can tomato paste
1 TBSP extra virgin olive oil
4 cups vegetables or chicken
2 cups kale or swiss chard, chopped
1 medium onion, diced
1 small green pepper, seeded & diced
1 red bell pepper, seeded and diced
1 large garlic clove, minced
1 ham hock (optional)
Parmesan cheese, grated

 

Remove the seasoning packet and beans from the bag.  Place beans in a large bowl and soak 6-8 hours.  Strain beans and discard water.  Heat EVCO in a large pot of medium high heat.  Add onion, peppers and garlic, cook and stir often.  Add remaining ingredients except kale/swiss chard.  Stir to combine.  Bring to a boil over high heat, skimming off any foam that rises to the top.  Stir occasionally for 1-2 hours or until beans are tender.  Add kale or swiss charge and simmer 15-21 minutes.  Take ham hock out, remove meat and add meat back into the soup.  Serve garnished with parmesan cheese.
